Quality of episodes and theme music aside, what is or what are some of your favorite opening animations? Eye candy, stuff that's fun to watch, and pretty to look at.

I'll generally like anything well animated or that isn't a collection of episode clips.
.The first intro to the old TMNT series is one of the best I've ever seen. Thundercats is up there too. My sister had kept a Thundercats VHS tape from the 80s, and every once in a year or so I'd watch it. The intro was so cool looking that I'd get all excited about the cartoon...and then the episode would start.
.On the more cartoony side, I also love the Beetlejuice series intro, not the roller coaster one (though still pretty good) but the other one.
.I also liked the MIB series intro. It wasn't all fast action and high energy, but still nicely animated with a unique vibe.
I'll also mention Rugrats (the original version) cuz no one else did. It was visually very different from other cartoons, not toony nor action-y, not much going on but a nice set up. It wasn't flashy or fast paced and it still looked great. I always liked the mirror effect when Angelica opens the door.

Believe it or not, the English dubbed sailor moon. I know, so bad but the moment I heard the music and saw the girls come on the screen I was like HOSHIT!
The Littles always made me giggle. I just loved how in the intro, at least the one I watched, they would show the world the Littles lived in and I just loved how they used all our things for items. Good times.
And The Muppet Babies....Need I say more?
There's also the Simpsons intro which shows you the entire city of Springfield.
I love too many to count, but if I had to narrow it down:
the original toon TMNT intro, of course;
the 90's X-Men intro. It had some really cool animation and that awesome guitar rift!
Batman: The Animated Series. No catchy jingle. No gimmicks. Just Batman beating the crap out of two thugs. Awesome!
And on that note, I also love the Batman Beyond intro for, like X-men, it's awesome guitar rift!
SWAT KATS: The Radical Squadron
the Show in My Mind (a.k.a. Classified (not the ACTUAL name, mind you
Batman: The Animated Series
Thundercats
Darkwing Duck (catchy song, by the way)
Freakazoid (For the WIN!)
Teenage Mutant Ninja Turtles (Classic, in the UK, it's known as Teenage Mutant Hero Turtles)
Must I go on?
